Who doesn't enjoy a delicious spicy chicken made with the homemade recipe that is passed down from generation to generation in the kitchens of Bolivian families? This delicious dish, which is present in some well-known restaurants in the main axis, is prepared with a good stew and to enhance its flavor, several cooks use Regia margarine as a special touch for this traditional preparation.

“We want to invite Bolivian homes to explore and take advantage of the flavor enhancement that Regia can provide in a typical home-cooked meal,” said Karim Arias, Marketing Manager of Alicorp in Bolivia. The executive stressed that gastronomy in Bolivian homes is characterized by a combination of pre-Columbian and European elements, with dishes that stand out for their aroma and strong flavor. A gift recipe

To prepare spicy chicken you need:

- One whole chicken, cut into pieces

- 2 large onions, finely chopped

- 3 cloves of minced garlic

- 3 tablespoons of Regia margarine

- Half a cup of red chili paste

- One tablespoon of ground cumin

- One tablespoon of dried oregano

- One cup of chicken broth

- 2 large potatoes, peeled and cut into thick slices

- One cup of peas

- Salt and pepper to taste

- Chopped parsley to decorate.

Season the chicken pieces with salt, pepper, cumin and oregano and let marinate for at least 30 minutes. The key is in the preparation of the ahogadito: heat the margarine over medium heat in a pan, add the onions and garlic and sauté until golden, add the chili paste and cook for a few minutes until everything is integrated; add the chicken pieces to the pan and brown on all sides, pour in the chicken broth and bring to a boil, cover the pan and cook over low heat for 30 minutes, or until the chicken is cooked and tender.

In a separate pot, boil the potato slices until tender but firm. Cook the peas until soft, avoiding mushy skin. Once the chicken is cooked, add the potatoes and peas to the pan. Cook for a few more minutes to allow the flavors to blend well and serve garnished with chopped parsley and accompanied by white rice, chuño, and onion and tomato salad.
